摘要 <P>PROBLEM TO BE SOLVED: To provide flour mix for a yeast doughnut, obtaining the yeast doughnut not oily and having texture such that the outside tastes crispy and the inside tastes like a rice cake, and a method of making a yeast doughnut using the flour mix. <P>SOLUTION: The flour mix is obtained by adding and mixing 0.5-4 pts.mass bean flour, 0.5-5 pts.mass gluten powder and 0.5-5 pts.mass roasting flour to 100 pts.mass cereal flour. In this method, dough is made by the flour mix for the yeast doughnut according to an ordinary method. In primary fermentation of the dough, fermentation is performed to attain an expansion coefficient of 80-200%, and then the yeast doughnut is made without hoiro fermentation. <P>COPYRIGHT: (C)2013,JPO&INPIT
