摘要 PURPOSE: A producing method of Nagasaki sponge cake is provided to offer the unique eating texture of the Nagasaki sponge cake to eaters. CONSTITUTION: A producing method of Nagasaki sponge cake comprises the following steps: mixing an egg yolk mixture, a grain syrup mixture, and sake to obtain a first mixture(S100); mixing egg whites and sugar with the first mixture to obtain a second mixture(S200); adding flour to the second mixture, and adding unrefined sugar(S300, S400); pouring the final mixture into a frame, and firstly baking the mixture at 140-180 deg. C in an oven for 30 seconds-1 minute; stirring the mixture after removing the frame from the oven, and secondly baking the mixture at 140-180 deg. C for 8-12 minutes; and mounting an iron plate over the frame before baking the mixture at 130-150 deg. C for 50-70 minutes, and finally baking the mixture after removing the iron plate at 130-180 deg. C for 3-7 minutes(S500).
