摘要 PURPOSE: Instant noodles produced without frying, and a producing method thereof are provided to freeze-dry the noodles after completely cooking the noodles using steam or boiling water. CONSTITUTION: A producing method of instant noodles produced without frying comprises the following steps: preparing flour(or rice powder), whole wheat, potato starch, and refined salt; kneading the powder mixture with water in a ratio of 10:3-4 for 7-15 minutes; rolling noodle sheets using a press roller; cutting the noodle sheets into noodle strips using a cutting device; cooking the noodle strips using 100-105 deg. C steam or water for 15-30 minutes; firstly freezing the cooked noodles for preventing the noodles from sticking to each other; inserting the frozen noodles in a drying frame for one person for molding; rapidly freezing the noodles at 20-35 deg. C below zero; and freeze-drying the noodle strings before packaging.
