<P>PROBLEM TO BE SOLVED: To provide an oil and fat composition suppressed in oxidization while highly containing monoacylglycerol and diacylglycerol. <P>SOLUTION: There is provided the oil and fat composition containing: (A) the monoacylglycerol of 1-35 mass% and the diacylglycerol of ≥5 mass%; (B) tocopherol; and (C) a phospholipid component satisfies the following conditions: (a) the ratio of phospholipid containing no nitrogen atom in the total amount of the phospholipid being 1 pt.mass is 0-0.65 pt.mass and (b) the ratio of phosphatidylethanolamine in the total amount of the phosphatidylethanolamine and phosphatidylcholine being 1 pt.mass is 0.2-1 pt.mass. <P>COPYRIGHT: (C)2013,JPO&INPIT |
