<P>PROBLEM TO BE SOLVED: To provide a method for producing a high-purity carnitine containing less impurity. <P>SOLUTION: In the method for producing carnitine obtained by cyanation and amidation of dichloropropanol by an enzyme reaction, followed by quaternization and hydrolysis, the method includes a step for further drying the obtained hydrolyzate under pressure of ≤40 Torr, and consequently, a carnitine having a composition formula represented by C<SB POS="POST">8</SB>H<SB POS="POST">9</SB>NO<SB POS="POST">3</SB>and a structure represented by formula (1) (wherein R<SB POS="POST">1</SB>-R<SB POS="POST">3</SB>are each independently a hydrocarbon group, nitrogen or oxygen) and containing less impurity is produced. <P>COPYRIGHT: (C)2013,JPO&INPIT |
