<P>PROBLEM TO BE SOLVED: To provide instant noodle for microwave oven cooking readily cooked with a microwave oven after addition of water, causing no boil over of hot water during cooked with the microwave oven, or having no need of draining the hot water before eating unlike conventional one, and also having mellow palate feeling, stiffness and excellent palate feeling after cooked; and to provide a method for producing the instant noodle for microwave oven cooking. <P>SOLUTION: The instant noodle for microwave oven cooking is obtained by adding 0.1-2 pts.mass of a hydrophobic emulsifying agent having an HLB of ≤5.5, and 0.5-5 pts.mass of oil and fat to 100 pts.mass of raw material cereal flour, and further adding 0.5-5 pts.mass of a leavening agent to the mixture. <P>COPYRIGHT: (C)2013,JPO&INPIT |
