<P>PROBLEM TO BE SOLVED: To provide a method for producing semi-raw noodles capable of shortening a drying time without giving an unfavorable effect to eat feeling. <P>SOLUTION: The method for producing the semi-raw noodles is characterized by drying raw noodles to 18 to 29 mass% of a water content by jointly using microwave-irradiation treatment and controlled humidity drying treatment. <P>COPYRIGHT: (C)2013,JPO&INPIT |
