PURPOSE: Yacon bread, baked goods containing yacon, and material producing system and method for producing noodles or the bread are provided to maximally prevent the browning of materials including the yacon. CONSTITUTION: A material producing system producing noodles or bread using yacon comprises the following: a washing device(10) for washing the yacon; a drying device(20) drying the yacon supplied from the washing device; a peeling device(30) peeling the skin from the dried yacon; a crushing device(40) crushing the peeled yacon; an additive storage tank for storing an additive inserted into the crushed yacon in a solid-liquid separator; the solid-liquid separator(60) separating an extract and solid parts from the crushed yacon mixed with the additive; an extract crystallizing device(200) crystallizing and producing powder from the extract; a strong flour storage tank(200-A) storing strong flour mixed with the yacon powder supplied into a baking material stirring device; the baking material stirring device(200-B) stirring the yacon powder and the strong flour to obtain baking raw materials; and a solid part drier(300) drying the solid part obtained from the separator. The material producing system also includes a weak flour storage tank(300-A) storing weak flour, a confectionery material stirring device(300-B), a mixer(400), a medium flour storage tank(400-A), and a noodle material stirring device(400-B).
