<P>PROBLEM TO BE SOLVED: To provide a method for producing an alcoholic beverage having a sufficiently low indole concentration. <P>SOLUTION: The method for producing an alcoholic beverage includes a fermentation step of fermenting a raw material for an alcoholic beverage with a yeast in the presence of at least one kind of substances belonging to vitamin B family. The at least one kind of substances belonging to the vitamin B family is at least one kind of the substances selected from a group consisting of pyridoxine, pyridoxal, pyridoxamine, nicotinic acid, nicotinamide and a salt thereof. <P>COPYRIGHT: (C)2013,JPO&INPIT |
