PURPOSE: A chicken extract using alkaline reduced water and lacquer, and a producing method thereof are provided to remove the toxicity from the lacquer before producing the chicken extract, and to remove the unique bad smell from the chicken extract. CONSTITUTION: A producing method of a chicken extract using alkaline reduced water and lacquer comprises the following steps: mixing 80wt% of alkaline reduced water, 12wt% of 5-10cm lacquer, 6wt% of jujube, and 2wt% of Glycyrrhizae radix, and boiling the mixture at 100 deg C for 15-20 hours to obtain lacquer liquid; mixing 60wt% of lacquer liquid, 30wt% of chicken, 6wt% of onion, 2wt% of ginger, 1wt% of black beans, and 1wt% of jujube in a double boiler; and double-boiling the mixture for 6-7 hours. The alkaline reduced water is obtained by electrolyzing water.
