摘要 The invention relates to a composition comprising oils with less tendency to darken that contain a concentration of polyphenols in a range of between 0.1 and 16 mg/Kg of product, with a free acidity value of between 0.001 and 0.1 %, a red colour on the Lovibond scale of between 0.2 and 3.2 and an added antioxidant. Said oils have been improved in terms of the refining thereof in order to produce a colouring product that is more stable in deep-frying processes in which the oil is subjected to high temperatures in order to obtain a product with greater resistance to degradation in this type of industrial application.
