PURPOSE: Boiled meat with salty sauce wrapped in greens using pine needles and green tea leaves, and a cooking method thereof are provided to offer antibiotic and antioxidant effects of the green tea leaves to the meat. CONSTITUTION: A cooking method of boiled meat with salty sauce wrapped in greens using pine needles and green tea leaves comprises the following steps: producing a green tea extract and pine needle powder; spraying the green tea extract to raw meat, and low temperature aging the meat at 0-10 deg C for 10-14 hours; inserting the meat into water containing the green tea extract and vegetable stock, and boiling the meat at 90-100 deg C; dehydrating the boiled meat, and sprinkling the pine needle powder; warping the boiled meat with paper and pulp paper for food including a coating layer containing yellow soil, and freezing the meat; and heating the frozen meat in a microwave oven for 10-15 minutes. |
