PROCESS FOR PRODUCING ETHYLENE/VINYL ALCOHOL COPOLYMER RESIN, ETHYLENE/VINYL ALCOHOL COPOLYMER RESIN, AND MULTILAYER STRUCTURE

A purpose of the present invention is to provide: a process for producing an EVOH resin which has sufficient suitability for long-run melt molding and is reduced in discoloration such as yellowing; an EVOH resin obtained by the production process; and a multilayer structure obtained from the resin. Another purpose is to provide a process for ethylene/vinyl alcohol copolymer resin production in which drying can be efficiently conducted while inhibiting quality deterioration. The former process for producing an ethylene/vinyl alcohol copolymer resin includes an infrared irradiation step in which either an ethylene/vinyl alcohol copolymer or an ethylene/vinyl ester copolymer that is a precursor for the ethylene/vinyl alcohol copolymer is irradiated with infrared rays.
