The invention addresses the problem of providing frozen otoshimi (collected fish meat in a minced form), which has high versatility like frozen ground fish meat and can be preserved by freezing. Particularly, the invention addresses the problem of preventing the denaturation by freezing of frozen otoshimi of a cod which is widely used in the form of frozen ground fish meat. A frozen uncooked fish meat product to which an alcohol having 2 to 5 carbon atoms which can be used in food has been added. A frozen uncooked fish meat product to which a sugar or a sugar alcohol and/or a salt has been further added is preferred. A method for preventing the denaturation by freezing of uncooked fish meat, characterized by adding an alcohol having 2 to 5 carbon atoms which can be used in food to uncooked fish meat, thereby suppressing the occurrence of denaturation by freezing due to decomposition of trimethylamine-N-oxide. |
