PURPOSE: Squid mixed with spicy and sour sauce and vegetables having improved eating texture is provided to enable patients, children, and elderly to easily eat the squid. CONSTITUTION: Squid mixed with spicy and sour sauce and vegetables includes 40-55wt% of salted radish slices, 35-50wt% of salted squid, 3-10wt% of red pepper powder seasoning, 2-10wt% of garlic, 1-10wt% of roasted sesame seeds, 0.1-1wt% of ginger, and 0.01-0.1wt% of fermented stevia powder. The salted radish slices is obtained by mixing 85-90wt% of radish slices, 3-10wt% of salting liquid, and 1-6wt% of refined salt. The salting liquid contains brewing vinegar, glacial acetic acid, and the fermented stevia powder. The red pepper powder seasoning includes red pepper powder and mixed seasoning powder containing the red pepper powder, steamed rice powder, dextrin, sugar, salt, garlic, and onion. |
