The method involves conveying vegetables i.e. half-long radish, in series one after the other, where the vegetables are coaxially aligned or approximately coaxially relative to each other. A cutting operation is carried out for each of the vegetables that are conveyed in series, where the cutting operation is carried out at an end (L2) of an elongated bulb part of each vegetable so as to separate a rootlet portion (R) relative to the bulb part of each vegetable. An independent claim is also included for an installation for cutting a rootlet part of a bulb of vegetable.
