Provided is a process to produce a composition which composition comprises: an oligosaccharide, sialyloligosaccharide in an amount of 0 to 1 wt %, and free sialic acid which process comprises subjecting a first suitable substrate to a suitable enzyme to produce an oligosaccharide, and subjecting a second suitable substrate to a sialidase to produce free sialic acid.
