An insufflation unit (9) insufflates air in another part (7b). A thermal recuperator is provided with a double flow heat exchanger (2) in which air flows (F1, F1') extracted from the former part and other air flows (F2, F2 ') insufflated in the latter part are passed. A cleaning unit with cleaning product sprayers is placed in an upstream air flow of the heat exchanger according to directions of flow of the former air flows. #CMT# : #/CMT# An independent claim is also included for a method for ventilation of installation. #CMT#USE : #/CMT# Ventilation installation for use in a culinary preparation professional kitchen. #CMT#ADVANTAGE : #/CMT# The cleaning unit with the cleaning product sprayers is placed in the upstream air flow of the heat exchanger according to directions of the air flow so as to take volatile particles pulverized through the heat exchanger to clean pulverizer product. The design of the cleaning product sprayers clean the containing bacteria selected to completely degrade water and carbon dioxide greases, thus limiting the bad odor and improving cleaning without releasing any toxicity gas. The grease is laid out in the upstream air flow of the thermal recuperator so as to limit the maintenance of the recuperator. The air flow circulates in the heat exchanger to allow a good distribution of the cleaning product in the heat exchanger, so that the operation of the installation is improved.
