<P>PROBLEM TO BE SOLVED: To provide methods for producing a highly viscous solution and a gel of high molecular weight tannin by ways different from the conventional ways. <P>SOLUTION: The method for producing a highly viscous solution or a gel of high molecular weight tannin includes treating an aqueous solution of high molecular weight tannin with at least one surfactant selected from an alkyl glycoside surfactant and an N-acylamino acid surfactant. The method for producing a gel of high molecular weight tannin includes treating a highly viscous solution of high molecular weight tannin obtained by the above method with an organic solvent or a water-containing organic solvent.
