<P>PROBLEM TO BE SOLVED: To provide a method for producing a non-polymer catechins-containing purified green tea extract which is low in the content of gallates of non-polymer catechins, that is a bitter astringent ingredient, and has suppressed bitter taste, sour taste and pungent taste. <P>SOLUTION: The method for producing the non-polymer catechins-containing purified green tea extract includes treating a green tea extract or its concentrate by steps including (A) a step of treating with tannase, (B) a step of treating with an anion exchange resin, and (C2) a step of contacting with an synthetic adsorbent to elute non-polymer catechins with an organic solvent solution. <P>COPYRIGHT: (C)2012,JPO&INPIT |
