PURPOSE: Noodles containing Pleurotus eryngii, and a producing method thereof are provided to use the Pleurotus eryngii and rice powder to obtain the noodles. CONSTITUTION: A producing method of noodles containing Pleurotus eryngii comprises the following steps: dehydrating the Pleurotus eryngii until the water content of the Pleurotus eryngii is 20-50%, and crushing the Pleurotus eryngii into 100-180 meshes; soaking washed rice using 0-5 deg C distilled water for 3-10 minutes, and crushing the rice into 100-180 meshes; mixing 42.5-242.5 parts of crushed Pleurotus eryngii by weight, 67.5-337.5 parts of crushed rice by weight, and 1 part of additive by weight; kneading the mixture at 90-120 deg C for 10-30 minutes, and compressing the mixture in the pressure of 5-15kPa to obtain the noodles.
