<P>PROBLEM TO BE SOLVED: To provide a method producing a fried food having voluminous coating, unevenness which conventional fried food does not have, crispy texture, and no oil absorption feeling. <P>SOLUTION: The fried food is produced by preparing frying mix by mixing 5-60 pts.mass of bread crumb whose water content is 20-40 mass% and whose size is 5 mm or larger with 95-40 pts.mass of powder for frying mainly containing cereal flours and/or starches, and then coating an ingredient with the frying mix followed by frying it in oil. <P>COPYRIGHT: (C)2012,JPO&INPIT |
