A method of bleaching crude sago flour with small reduction of viscosity in the resulting product comprises treating crude sago flour with chlorine, e.g. by adding sodium hypochlorite until the desired colour is attained, the slurry of crude sago flour being maintained at a pH value dependent on the viscosity of the crude sago, e.g. a pH of 11-11.5 for a viscosity greater than and 4-5 for a viscosity less than 250 Brabender units, subsequently removing the excess active chlorine, e.g. with H2O2, the pH of the slurry being then preferably adjusted to 6-7, and the bleached flour is then washed and dried to a predetermined mixture content, e.g. 14 per cent. |
