ICE CREAM INCLUDING CARBON DIOXIDE AND ITS MANUFACTURING PROCESS

PURPOSE: Ice cream containing carbon dioxide gas, and a producing method thereof are provided to prevent the evaporation of the carbon dioxide gas injected into the ice cream. CONSTITUTION: A producing method of ice cream containing carbon dioxide gas comprises the following steps: freezing an ice cream mix or an iced cake liquid mix, and injecting the carbon dioxide gas into the mix at the same time; and filling the mixture into a container. The injection process of the carbon dioxide gas is performed by 2.0-6.5 bar of injection pressure. The filling process is performed at 2-6 deg C below zero in a sealed condition. The ice cream contains 5-60vol% of carbon dioxide gas.
