PURPOSE: Sweet potato sauce, and a producing method thereof are provided to offer the improved functionality of the sweet potato sauce to users by using purple sweet potato and yellow sweet potato. CONSTITUTION: Sweet potato sauce uses purple sweet potato and yellow sweet potato in a weight ratio of 60-80:20-40. The sweet potato sauce is either sweet potato ketchup or sweet potato dressing. A producing method of the potato ketchup comprises the following steps: mixing 20-50wt% of sweet potato paste, 3-30wt% of saccharide, 1-3wt% of salt, 1-7wt% of acidifier, 0.01-0.05wt% of flavoring agent, 0-5wt% of minced garlic or onion, and 0-3wt% of starch or modified starch; and adding purified water into the mixture, and heating the mixture with 80-95 deg C hot water for 15-30 minutes. |
