<P>PROBLEM TO BE SOLVED: To provide whitebait paste which can solve problems that consumption patterns are biased, and expiration dates come shortly, which deals with a variety of consumer classes and a variety of demands and uses from customers, is a highly nutritious food containing ample quality protein or calcium, and is excellent in taste, aroma, scent, firmness, smoothness, and deliciousness, and to provide a manufacturing method of the same. <P>SOLUTION: The method for manufacturing the whitebait in a paste state includes: boiling the whitebait in 100°C hot water for 40 seconds to obtain half raw whitebait; drying the whitebait to have a moisture value of 60% in terms of weight ratio to obtain half-raw dried whitebait; and crushing the whitebait by a crushing means to make the white bait in 2 mm or less. <P>COPYRIGHT: (C)2012,JPO&INPIT |
