PURPOSE: Functional fermented soybean paste containing sword bean and Phellinus linteus, and a producing method thereof are provided to offer the nutrition and the flavor of the sword bean, and the pharmaceutical functions of the Phellinus linteus to the fermented soybean paste. CONSTITUTION: A producing method of functional fermented soybean paste comprises the following steps: boiling 500g-10kg of sword bean and 10g-800g of Phellinus linteus with 5-25L of water in a caldron for 1-7 hours at 60-100 deg C, and removing the moisture; separating the Phellinus linteus, and crushing the boiled sword beans before mixing the Phellinus linteus and the sword beans with 300g-3kg of fermented soybean powder; and pouring 200g-2kg of ammodytes personatus sauce to the sword bean mixture and the Phellinus linteus, and fermenting the mixture for 1-5 days in the shade. The Ammodytes personatus sauce can be replaced with 0.1-3L of brine. |
