PURPOSE: A producing method of fried black bean paste sauce is provided to remove the oily taste and flavor of pork, and to offer the savory taste and flavor to the sauce. CONSTITUTION: A producing method of fried black bean paste sauce comprises the following steps: pan-frying pork with cooking oil in a frying pan; adding chopped garlic, white beans, salted soybean, and peanut powder to the pork before it is fully cooked, and pan-frying the mixture; adding soy sauce and red pepper powder into the mixture before cooking in the weak heat; adding onion, pumpkin, and cabbage into the mixture for pan-frying; adding sugar and salt into the mixture when the vegetables are half-cooked, and inserting pan-fried black bean paste; boiling the mixture with beef bone stock into the mixture for uniformly dispersing the black bean paste; and adding starch into the mixture. |
