PURPOSE: Red pepper paste with garlic using fermented jujube liquid instead of water, and a producing method thereof are provided to maintain the unique flavor of garlic. CONSTITUTION: A producing method of red pepper paste with garlic using fermented jujube liquid instead of water comprises the following steps: removing dust and foreign materials from garlic and jujube, and cutting the garlic and jujube(S10); heating honey at 70-90 deg C to obtain honey liquid(S20); mixing the cut garlic with the honey liquid in a mass ratio of 10:2 in a container, and fermenting the mixture to obtain fermented garlic(S30); mixing the cut jujube and the honey liquid in a mass ratio of 10:2 in another container, and fermenting the mixture to obtain the fermented jujube liquid(S40); mixing 5-15wt% of fermented garlic, 5-15wt% of fermented jujube liquid, 70-80wt% of red pepper powder, 5-15wt% of honey, and 2-8wt% of bay salt(S50); and firstly fermenting the mixture in a jar for 50-70 days after sealing the jar with a cotton cloth, and secondly fermenting the mixture for 10-30 days in the jar(S60).
