<P>PROBLEM TO BE SOLVED: To provide a gummy candy having excellent heat resistance, and to provide a method for efficiently manufacturing the same. <P>SOLUTION: The heat resistant gummy candy includes a crosslinking gelatin obtained by allowing polyphenol oxidase to act on with ferulic acid and/or limonene as a crosslinking accelerator. The heat resistant gummy candy is obtained by gelating a gummy candy base containing crosslinking gelatine, in which the ferulic acid and/or limonene is mixed with a gelatin solution, and a gummy candy material is mixed with the crosslinking gelatine solution in which the polyphenol oxidase is acted on the gelatine solution. Further, the gummy candy is obtained by gelating the gummy candy base containing crosslinking gelatine, in which the polyphenol oxidase is acted on a gummy candy base solution, in which the ferulic acid and/or limonene is mixed with water, gelatine, and the gummy candy raw material. <P>COPYRIGHT: (C)2012,JPO&INPIT |
