PURPOSE: A composition for producing cookies containing bean-curd dreg powder is provided to offer excellent nutrition of bean-curd dregs to the cookies. CONSTITUTION: A composition for producing cookies contains flour, 5-150wt% of bean-curd dreg powder, 10-70wt% of powder fat, and 0.1-10wt% of modified starch. The bean-curd dreg powder has the particle size of the 50-300 meshes. The composition also contains more than one material selected from the group consisting of 50-100wt% of sugar, 5-15wt% of protein powder, 20-50wt% of margarine, 0.1-1wt% of baking powder, 0.5-2wt% of salt, 5-15wt% of skimmed milk powder, and 0.1-1wt% of vanilla extract. The composition also contains vitamins, minerals, or dietary fibers. |
