摘要 PURPOSE: A kimchi seasoning composition containing Cordyceps sinensis, and kimchi using the same are provided such that consumers can regularly intake Cordyceps sinensis. CONSTITUTION: Kimchi is obtained by the following steps: mixing 10.3-11 wt% of stock and 9-10wt% of boiled Cordyceps militaris to obtain a seasoning composition; mixing 10 kg of vegetables and 3-4 kg of seasoning composition; and aging the mixture at 3-6 deg. C for 2-4 days. The stock includes 40-56 wt% of radish slices, 10.3-11 wt% of red pepper powder, 5.5-6 wt% of salted shrimp sauce, 4-4.5 wt% to salted anchovy sauce, 4.4-6 wt% of garlic, 3-3.5 wt% of Korean leek, 2.5-3 wt% of spring onion, 1.5-2 wt% of onion, 1-1.5 wt% of ginger, 1-1.5 wt% of apple extract, and 30-50 g of Cordyceps sinensis.
