<p>A process of producing a fatty acid polyoxyalkylene alkyl (alkenyl) ether represented by formula (1), characterized by reacting a fatty acid represented by formula (2) with a polyoxyalkylene alkyl (alkenyl) ether represented by formula (3) in the presence of an acid catalyst and an antioxidant agent.
