<P>PROBLEM TO BE SOLVED: To provide a method for producing an Ume extract reduced in harsh taste and fully-containing original flavor of Ume fruit. <P>SOLUTION: The Ume fruit is frozen to obtain frozen Ume fruit, and the frozen Ume fruit is immersed in a sugar solution to obtain Ume extract by extraction with sugar. Depending on circumstances, an alcohol-extracted Ume fruit obtained by alcohol extraction of the Ume fruit, separately from the process of the extraction with sugar, is added to and mixed in the Ume extract obtained by the extraction with sugar. <P>COPYRIGHT: (C)2012,JPO&INPIT |
