<P>PROBLEM TO BE SOLVED: To provide a condition for preparing the optimal thickness of a food composition for a bowl of rice topped with Abura-fu (deep-fried gluten wheat food) which is provided sealed in a retort pouch. <P>SOLUTION: The food composition is obtained by well boiling stock with sugar into which the Abura-fu, Miso (soybean paste), and an onion or leek is added so that the food materials are impregnated with the stock, and then subjected to retort treatment. The food composition is added with 1.0-1.8 wt.% of starch so that a liquid component in the food composition in the retort pouch opened and heated, has a viscosity at a shear rate of 0.1-0.3 sec<SP POS="POST">-1</SP>being 1.5-2.1 times larger than that at a shear rate of not less than 0.7 sec<SP POS="POST">-1</SP>. <P>COPYRIGHT: (C)2012,JPO&INPIT |
