PURPOSE: A vacuum kneading machine for molding dumplings is provided to obtain flour dough in the kneading machine, and to improve the chewy texture and the stickiness of dumpling skins. CONSTITUTION: A vacuum kneading machine for molding dumplings comprises the following: a hopper(1) storing flour; a transfer screw(2) transferring the predetermined amount of flour in the hopper to a kneading screw(4); a fixed amount water supplying pump(11) supplying water to the flour through a water supply nozzle(3) for kneading the flour with the water; a compressing screw receiving the obtained dough; a vacuum pump(12) applying the vacuum pressure through an air suction hole(7) to the dough for removing air from the dough; a dumpling skin molder(9) extruding tube-type dumpling skins; an air absorbing hole(10) removing the air from the dumpling skins; a dumpling filling hopper(5) feeding a dumpling filling to the dumpling skins through a feeding screw(6); a dumpling molding roller(13) molding dumplings; and a transfer belt(14) for transferring the dumplings.
