PURPOSE: A producing method of pajeon(fried green-onion pancake) is provided to soften the taste of the pajeon by using mineral water of alkaline spring and chives. CONSTITUTION: A producing method of pajeon(fried green-onion pancake) comprises the following steps: mixing mineral water of alkaline spring and seafood stock in a ratio of 15-20:80-85 to obtain stock; mixing 100 parts of stock by weight and 3-5 parts of apple juice by weight, and adding flour and rice powder into the mixture for kneading; coating chives with the obtained batter without cutting; heating cooking oil or sesame oil on a frying pan, and mounting the chives coated with the batter on the frying pan; sprinkling dried apple slices on the surface of the cooked pajeon, and turn the upside down of the pajeon; and smoking the cooked pajeon for 1-2 minutes. |
