PURPOSE: Dried anchovy using a mixed solution of a bamboo leaf extract and bamboo salt, and a producing method thereof are provided to prevent the liquid acidification and the browning of the anchovy during a drying and storing process. CONSTITUTION: A producing method of dried anchovy using a mixed solution of a bamboo leaf extract and bamboo salt comprises the following steps: drying bamboo leaves in the shade before crushing, and dipping the crushed bamboo leaves in methanol for extracting for 3-4 days; decompress-concentrating the bamboo leaf extract(S100); adding bay salt into phyllostachys bambusoides, and sealing the phyllostachys bambusoides with rosin before heating inside a kiln at 850-1,000 deg C(S200); crushing the obtained product to obtain bamboo salt powder, and mixing with water in the concentration of 3%; mixing 1-30 parts of bamboo leaf extract by weight with 70-99 parts of bamboo salt solution by weight(S300); spraying 10-20 parts of bamboo leaf extract and bamboo salt solution mixture by weight to 100 parts of dried anchovy by weight(S400); and cold-air drying the dried anchovy for 24 hours at 30 deg C(S500). |
