PURPOSE: Salted and fermented mushroom containing lentinus edodes, and a producing method thereof are provided to reduce the salinity of the salted mushroom, and to prevent the breeding of putrefactive microorganisms. CONSTITUTION: A producing method of salted and fermented mushroom containing lentinus edodes comprises the following steps: boiling the lentinus edodes in boiling water for 20-60 minutes; cutting the boiled lentinus edodes into the length of 0.5-2.5cm; crushing salted seafood into the average particle diameter of 2-10mm; and mixing 100 parts of salted seafood by weight, 1-10 parts of cut lentinus edodes by weight, 60-120 parts of seasoning mixture by weight, and 5-30 parts of glutinous rice gruel by weight. The salted seafood is selected from salted anchovy, salted trout, salted yellow corvina, or salted hairtail aged for 2-5 years.
