METHOD FOR PRODUCTION OF LACTULOSE FROM LACTOSE USING BY CELLOBIOSE 2-EPIMERASE

PURPOSE: A manufacturing method of lactulose from lactose using cellobiose 2- epimerase is provided to reduce manufacturing cost and to directly manufacture from lactose. CONSTITUTION: A manufacturing method of lactulose from lactose uses cellobiose 2- epimerase. The cellobiose 2- epimerase has amino acid sequence described in the sequence number 1(SEQ ID NO:1). The cellobiose 2- epimerase is coded by a gene having the base sequence described in the sequence number 2. The cellobiose 2- epimerase is originated from Caldicellulosiruptor saccharolyticus strain. A manufacturing method of the cellobiose 2- epimerase comprises the following steps: manufacture a recombinant expression vector equipped with the cellobiose 2- epimerase gene having the base sequence described in the sequence number 2 which is originated from Caldicellulosiruptor saccharolyticus strain; culturing microorganism transformed into a recombinant vector; inducing the cellobiose 2- epimerase gene expression; separating and purifying the expressed recombinant protein; and manufacturing lactulose using the cellobiose 2- epimerase.
