The invention relates to an acrolein analysis method. According to the invention, the method consists in spectrophotometrically measuring the enzymatic activity in solutions with or without cysteine addition and is based on the acrolein-specific characteristic of reacting with the cysteine added to the reaction medium and to form thereby adducts which do not inhibit the alcohol dehydrogenase, the method being applicable in the analysis of industrial water and food control.
