摘要 The present invention relates to a method for using an enzyme resistant to high pressures in high-pressure conditions, to a method for promoting the enzyme activity of the enzyme resistant to high pressures by means of a high-pressure treatment, to a composition which contains the enzyme resistant to high pressures for decomposing proteins in high-pressure conditions, to a composition which contains the enzyme resistant to high pressures for preparing natural flavoring substances, to a high-pressure treatment container which contains the enzyme resistant to high pressures, and to a method for measuring the enzyme activity of the enzyme resistant to high pressures, comprising a step of decomposing an azocasein solution serving as a substrate using the high pressure-resistant enzyme treated under high-pressure conditions. According to the present invention, the reaction speed and/or reaction yield of a method for using an enzyme may be improved, and therefore it is expected that the method of the present invention may result in significant changes in a variety of industries that use enzymes, including the industry of making food using enzymes.
