PURPOSE: A vacuum dough noodle maker is provided to remove air contained in dough by a vacuum pump, and to extruded through a extrusion screw, thereby remarkably improving glutinosity and stickiness of a noodle. CONSTITUTION: A vacuum dough noodle making machine comprises a transfer screw(2), a mixing screw(4), an extrusion screw(5), a pressing roller, and a micro cutting roller(12). The transfer screw transfers dough in a hopper(1) to the mixing screw. The mixing screw completes the dough by water supplied to a quantitative water pump(9). The dough transfers to the extrusion screw. An air absorbing hole(6) is mounted in sections of the mixing screw and the extrusion screw. A noodle extrusion hole(7) is manufactured from a material with micro pores. Through the air absorbing hole, air in the dough is removed. An extruded noodle is rolled by the pressing roller, and cut by the micro cutting roller.
