PURPOSE: A method for improving organic selenium production is provided to optimize production using optimized carbon source, nitrogen source, and mineral source. CONSTITUTION: A method for producing organic selenium using yeast comprise a step of adding galactose as a carbon source, magnesium sulfate or potassium chloride as mineral and peptone as a nitrogen source during S. cerevisiae 6M(KACC93114P) mutant culture. A method for enhancing production efficiency of organic selenium comprises adding selenium when culture is started by fed-batch.
