PURPOSE: A premix composition for meat containing rice powder, modified starch, and powder fat is provided to offer the crunchy and chewy texture of meat dish to eaters. CONSTITUTION: A premix composition for meat contains rice powder, modified starch, and powder fat. The rice powder contains 0.0000001-10.0wt% of crude protein and 70-99wt% of starch, and has the particle size of 15-80 micrometers. The modified starch includes acetyl starch, ester starch, ether starch, cross-linked starch, cross-linked ester starch, cross-linked ether starch, or more than one oxidized starch selected from tapioca starch, corn starch, waxy corn starch, potato starch, non-glutinous rice starch, or glutinous rice starch. 100 parts of rice powder by weight contains 30-100 parts of modified starch by weight, and 2-30 parts of powder fat by weight.
