A cooking appliance has a cooking area for feeding amounts of heat to a heating device. In a regulating time range (t2) a temperature in a cooking area is regulated at a set point value Tsoll. In order to feed heat energy to items being cooked in an effective manner, the temperature in the cooking area is not regulated in a control time range (t3) but a defined amount of heat or none at all is fed to the cooking area independently of the set point value. An Independent claim is also included for a cooking appliance with a cooking area, a heating device for feeding amounts of heat into the cooking area and a regulating device for regulating the temperature of the cooking area at a set point value in a control range.
