PURPOSE: A manufacturing method of a kimchi hot sauce, and a manufacturing method of kimchi for the kimchi hot sauce are provided to improve the spicy flavor of the kimchi, and to secure the effects of the kimchi. CONSTITUTION: A manufacturing method of a kimchi hot sauce comprises the following steps: manufacturing fermented kimchi including fermenting strains and a red pepper paste(S10); extracting the kimchi to make a kimchi extract(S20); adding vinegar and gum to the kimchi extract(S30); and aging the kimchi extract(S40). |
