A method for making soft cheese with cellulose comprises preparing milk, ultrafiltering thereof, reserving a milk concentrate, heating, homogenizing, pasteurizing, cooling, prepacking, adding a starter culture, packing, marking, ripening, cooling, maturating, realizing. According to the invention, prior to homogenizing a mixture of protein concentrate and cellulose is added to the milk concentrate in an amount of 5-10 % of the mass of the milk concentrate. The mixture of the protein concentrate, obtained of a ultrafiltration retentate thereof, and cellulose in an amount of 2-4 % of the mass of the mixture is subjected to heat treatment. |
