摘要 <P>PROBLEM TO BE SOLVED: To provide seasoning soy sauce which is produced by admixing Kaeshi (soup base) containing soy sauce and sugar, with Irori (soup stock) consisting mainly of soybean Irori, bonito Irori and kelp Irori, has excellent taste and also prevents putrefaction of food material. <P>SOLUTION: The new seasoning soy sauce is produced by: admixing Kaeshi which is obtained by putting sugar at an amount corresponding to the amount of soy sauce into a prescribed amount of soy sauce to make the sugar dissolve, with Irori which is obtained by making bonito Irori, kelp Irori and salt each at an amount corresponding to that of soybean Irori dissolve into soybean Irori produced by pressurizing a prescribed amount of soybeans soaked in water, and steaming the pressurized soybeans followed by extracting the pressurized and steamed soybeans using a filter cloth, and adding Sake at an amount corresponding to that of the soybean Irori, at a rate of respective prescribed amounts under prescribed temperature conditions. <P>COPYRIGHT: (C)2012,JPO&INPIT
