摘要 PURPOSE: A producing method of rice kefir using lactobacillus plantarum strains and saccharomyces cerevisiae strains is provided to offer the functional activity of the strains for fermenting the rice. CONSTITUTION: A producing method of rice kefir comprises a step of fermenting a medium using 1-10wt% of lactobacillus plantarum MG207 strains and 1-10wt% of saccharomyces cerevisiae MG111 strains. The medium contains 1-10wt% of rice powder, 0.1-3wt% of peptone, and the balance of purified water. The fermentation process is performed by firstly fermenting the medium at 25-30 deg C for 4-10 hours, and secondly fermenting the medium at 15-25 deg C for 21-27 hours. The rice kefir uses sucrose as a freezing protector for a freeze-drying process.
